Instructions
  1. Combine sauce ingredients in a medium bowl; set aside.
  2. Blanch broccoli in boiling water until tender-crisp, about 1 minute. Drain, rinse with cold water and drain again. Set aside.
  3. Place a wok or stir-fry pan over medium-high heat until hot. Add oil, swirling to coat sides. Add ginger and onion salt; cook, stirring, until fragrant, about 10 seconds. Add all mushrooms; stir fry until mushrooms are tender, about 3 minutes.
  4. Carefully add tofu and sauce; reduce heat and cook until heated through. Add cornstarch solution if sauce needs to be thickened.
  5. Arrange broccoli in center of a serving platter. Surround with mushroom-tofu mixture.

Instructions
  1. Combine marinade ingredients in a medium bowl. Add chicken. Cover and refrigerate 2 hours or overnight.
  2. For dried shiitake mushrooms, soak in warm water to cover until softened. Remove stems from both dried and fresh mushrooms.
  3. Arrange chicken, mushrooms and ham alternately on a plate. Steam over medium-high until chicken is cooked, about 12 minutes.
  4. Combine sauce ingredients in a small saucepan. Bring to a boil over medium-high heat. Thicken with cornstarch solution; keep warm.
  5. Parboil baby bok choy in boiling water until tender crisp. Drain.
  6. To serve, arrange bok choy around rim of plate with chicken, mushrooms and ham. Pour warm sauce over all.

  1. Combine marinade ingredients in a medium bowl. Add lamb chops; stir to evenly coat. Set aside for 30 minutes.
  2. Combine hoisin-lemon sauce ingredients in a small bowl; set aside.
  3. Heat a grill pan over medium-high heat until hot. Brush with oil. Place lamb chops on grill pan. Cook, turning once, until medium-rare, about 3 minutes on each side.
  4. Transfer lamb chops to a serving plate. Serve with sauce on the side.

  1. Preheat oven to 375 degrees F. Cut off top of pumpkin, scoop out seeds and a portion of pumpkin flesh (to make room for filling). Set aside pumpkin top.
  2. Rub inside of pumpkin with wine and Chinese five-spice powder. Place pumpkin on a parchment-lined baking sheet. Bake in pre-heated oven until pumpkin is almost cooked, 30 – 40 minutes.
  3. While pumpkin is baking, combine sauce ingredients in a small bowl; set aside.
  4. Remove pumpkin from oven. Reduce heat to 350 degrees F.
  5. Heat a wok or stir-fry pan over medium-high heat until hot. Add oil, swirling to coat sides. Add chicken; stir fry for 1 minute. Add onion and mushrooms; stir-fry for 2 minutes. Stir in sauce; mix well. Add cornstarch solution; cook, stirring, until slightly thickened.
  6. Spoon stir-fry mixture into pumpkin. Add the top, return pumpkin to 350 degree F. oven. Bake until pumpkin is tender, about 25 minutes.

  1. Water-blanch lotus rings in boiling water for 1 minute. Drain and pat dry with paper towels. Dust lotus rings with cornstarch and set aside.
  2. In a mixing bowl, combine filling ingredients; mix thoroughly. Spread 1 tablespoon filling onto a lotus ring and sandwich with another lotus ring.
  3. Heat wok over medium-high heat until hot. Add oil, swirling to coat sides. Pan-fry lotus root pockets for 3 minutes on each side or until golden brown. Drain excess oil and add water; cover, reduce heat and simmer for 2 - 3 minutes or until liquid is absorbed.
  4. Combine sauce ingredients in a saucepan and bring to a boil. Add cornstarch solution and stir until sauce thickens. Pour sauce over lotus pockets to serve.

Pickled Long Beans Stir-Fry

  1. Heat 1 tablespoon oil in a stir-fry pan over medium-high heat. Add beef and stir-fry, breaking beef up into small pieces. Add rice wine, soy sauce and oyster sauce. Cook until beef is completely cooked and no liquid remains in the pan, about 5 minutes.
  2. Remove beef from pan. Set aside.
  3. Wipe pan clean and add remaining 1 tablespoon oil. Heat over medium-high heat and add garlic, cook until fragrant, about 30 seconds.
  4. Add red, yellow and serrano peppers, cook until crisp-tender, about 1 minute. Add pickled long beans, sugar and rice wine; cook for 1 – 2 minutes. Return ground beef to pan and toss to combine.
  5. Serve hot, garnished with green onions.
Recipe Notes

If pickled long beans are not available, it is ok to substitute store-bought giardiniera (Italian pickled vegetables).

  1. Bring a pot of water to boil, carefully lower eggs into pot. Lower heat and simmer for 7 minutes. Lift eggs out of hot water and place in an ice-water bath.
  2. When cool enough to handle, peel shells and place eggs into a sealable bag.
  3. Combine all marinating sauce ingredients, stirring to dissolve sugar. Pour sauce into bag with eggs. Squeeze out all the air and seal bag.
  4. Let eggs marinate for 1 – 2 hours. Remove and slice in half to serve. Garnish with pepper chili salt.
