Sauce:
Instructions
  1. Grill eggplant until evenly charred all over.
  2. Cut eggplant lengthwise and open from slit to flatten.
  3. To make sauce, heat oil in a saucepan. Add ginger, garlic, green and red chilies and cook until fragrant, about 1 minute. Add vinegar, sugar and soy sauce, stir to dissolve sugar.
  4. To serve, pour sauce over eggplant.

Steamed Pumpkin with Fermented Rice

Sauce:
Instructions
  1. Remove peel and seeds from squash. Cut into wedges and place in a bowl. Steam over high heat until squash is done, about 35 minutes.
  2. To make sauce, combine all sauce ingredients in a small saucepan. Bring to a simmer and thicken with cornstarch slurry.
  3. To serve, invert squash onto a plate. Pour sauce over squash.
Recipe Notes

*Rice lees are the leftover rice grains from making wine. This ingredient may be purchased in jars in the refrigerated section of well-stocked Asian markets.

Green Tea Krumkake Cookies

  1. Place matcha powder in a small bowl. Add water and stir to mix well.
  2. Place a sheet pan next to cooktop where you’ll be making the cookies. Pour powdered sugar onto the sheetpan in a 6” – 8” pile.
  3. Crack eggs into a mixing bowl, add sugar and beat with an electric mixer until just blended.
  4. Add flour and beat some more to mix.
  5. Add butter and beat to mix well.
  6. Add dissolved matcha and beat to mix well.
  7. Heat a krumkake iron over medium heat. Dollop 1 teaspoonful batter onto iron. Cook for 1 minute on each side.
  8. Lift out cookie and roll on powdered sugar.

Duck Egg Surprise

Instructions
  1. Crack duck eggs carefully to keep shell as intact as possible. Pour out egg whites and leave yolk in the shell.
  2. Soak glutinous rice with water to cover for 30 minutes. Drain and set aside.
  3. Soak dried mushroom with hot water to cover for 15 minutes. Remove and discard stem. Chop cap and set aside.
  4. In a bowl, combine glutinous rice, mushroom, carrots, corn, green peas, green onions, soy sauce, salt and white pepper.
  5. Spoon rice mixture into each egg shell. Steam filled eggs for 25 – 30 minutes. Slice in half to serve.

Mung Bean Jelly with Sichuan Spicy Sauce

Instructions
  1. Place mung bean flour in a medium bowl; add 1 cup of water and stir to mix well.
  2. Bring 1 cup of water to a boil, add mung bean slurry and cook, stirring, until translucent.
  3. Transfer mung bean paste into a bowl. Cover well and refrigerate overnight.
  4. To make sauce, heat cooking oil in a small saucepan. Add ginger, garlic and green onion and cook until fragrant, about 2 minutes.
  5. Add spicy bean paste, fermented black beans, soy sauce, black vinegar and sugar. Stir to combine and cook for 5 minutes.
  6. When mung bean jelly is set, remove from bowl and cut into ¼” x ¼” x 4” strips. Place on a serving plate and top with spicy sauce. Garnish with green onions and chili oil.

Tea-Flavored Eggs

Instructions
  1. Bring a pot of water to boil, carefully lower eggs into pot. Lower heat and simmer for 7 minutes. Lift eggs out of hot water and place in an ice-water bath.
  2. When cool enough to handle, peel shells and place eggs into a sealable bag.
  3. Combine all marinating sauce ingredients, stirring to dissolve sugar. Pour sauce into bag with eggs. Squeeze out all the air and seal bag.
  4. Let eggs marinate for 1 – 2 hours. Remove and slice in half to serve. Garnish with pepper chili salt.
