Instructions
  1. Prepare six small aluminum foil cupcake baking cups
  2. Brush each cupcake baking cup with oil.
  3. Combine all spice mixture ingredients together in a small bowl. Set aside.
  4. Crack one quail egg into each cup and place on a grill. Cook until egg is opaque, about 3 minutes.
  5. Sprinkle some spice mixture over each egg before serving.

Spicy Crispy Beef with Rice Crusts
Ingredients
oil for deep-frying

Instructions
  1. Slice beef across the grain into 1/8” thick slices. Combine with soy sauce, sugar, rice wine, egg white and cornstarch. Set aside.
  2. In a large stir-fry pan, bring oil to 390 degrees F. over medium-high heat. Gently add rice cakes and fry till crispy and lightly golden. Remove from pan and drain.
  3. Coat each slice of beef with panko bread crumbs, pressing to make sure crumbs adhere well. Add to wok and deep-fry until beef is done and crispy, about 3 -4 minutes. Remove from pan and drain.
  4. Pour off all but 2 tablespoons of the oil. Add dried red chilies and cook till fragrant, about 30 seconds. Add rice cakes, beef, and seasonings. Toss to combine and serve hot.

Tea-Flavored Eggs

Instructions
  1. Bring a pot of water to boil, carefully lower eggs into pot. Lower heat and simmer for 7 minutes. Lift eggs out of hot water and place in an ice-water bath.
  2. When cool enough to handle, peel shells and place eggs into a sealable bag.
  3. Combine all marinating sauce ingredients, stirring to dissolve sugar. Pour sauce into bag with eggs. Squeeze out all the air and seal bag.
  4. Let eggs marinate for 1 – 2 hours. Remove and slice in half to serve. Garnish with pepper chili salt.
